Eating out for inspiration

I’ve spent a lot of time eating out recently as the weather has been amazing. I think I have probably eaten around 10 different cuisines over the last few weeks, so I’m feeling thoroughly inspired with recipe ideas. I usually get in and, before I have taken off my shoes, I have my head stuck in my pantry looking at ingredients and my spice tin wondering how I can adapt what I just ate into something with added flavour.

A dish I ate on Friday got my creativity going and I tried a recipe out yesterday – it tasted amazing! It didn’t take me that long either as most of the ingredients were sitting in my fridge. I heated some oil with some cumin seeds, garlic, ginger and dried red chillies. Then I added some sliced leeks and spring onions and let them colour for a few minutes before stirring through a few tablespoons of Patak’s Tikka Masala Paste. And as always I sprinkled in a tablespoon of water so the spices didn’t burn. I added some lean lamb mince and some cherry tomatoes, threw in some frozen peas and a little fresh mint, then covered it and left to cook through. I filled some pitta bread with the lamb masala and topped it with some seasoned yoghurt. Don’t forget to check the seasoning of the masala.

I have just had a wonderful kitchen designed for me and so, as much as I have enjoyed eating out these past few weeks, I can’t wait to spend some time at home cooking in my sparkly new kitchen.
