Almond & Melon Milk (Badaamin Karboocha)

This traditional drink is sweet and milky, but has a real kick to it. It includes one of my favourite spices – cardamom – a really aromatic spice with a warming, spicy - almost smoky flavour. This drink makes a great mid-afternoon snack, as it is filling enough to keep you going until dinner - or try it for dessert - it really is something different.

Ingredients

  •  75g melon or sunflower seeds
  • 1 tablespoon white poppy seeds
  • 1.2 litres milk
  • 10 saffron seeds
  • 2 tablespoons jaggery or honey
  • 1 tablespoon cashew nuts, chopped
  • 1 tablespoon almonds, chopped
  • 3 green cardamom pods, ground (with husks)
  • pinch of black pepper

Methods

  1. Soak the melon or sunflower seeds in water for 30 minutes.  Drain and place in a blender with the poppy seeds and 1 tablespoon of milk.
  2. Soak the saffron strands in 1 tablespoon of hot water for 5 minutes.  Heat the milk then add the remaining ingredients to the pan.  Stir in the sunflower seed mixture together with the saffron-infused water.  Serve chilled.
