This is a fantastic dip that great with Pappadums - or any sort of canape that you might want to dip, for that matter. It has a real zing to it, and uses one of my all time favourite products - Brinjal Pickle.

  1. Slice the aubergine thinly lengthways and grill or griddle for 8 - 10 minutes until golden.
  2. Finely chop the aubergine and mix with the remaining ingredients
