Aubergines with Tomatoes & Raisins (Baingan Kahlua)

This is a really yummy veggie dish that tastes great as a main meal, but can be perfect as a side dish. The hearty base of aubergines mixed with our tangy Tikka Masala paste tastes fantastic with the sweeter notes of ginger and raisins – a great way to get those who don’t always get their 5 a day eating more veggies.

Ingredients

  • 300g aubergine, diced
  • 300g canned chopped tomatoes
  • 2 medium onions, diced
  • 1 tsp garlic purée
  • ½ tsp ginger purée
  • ½ tsp cumin seeds
  • 15g raisins
  • 2 tbsp Patak's Tikka Masala Paste
  • 2 tbsp oil
  • 1 tbsp fresh coriander, chopped

Methods

  1. Heat the oil in a pan and add the cumin seeds.  When they begin to crackle add the diced onions and fry on a medium heat for 3 minutes.  Add the garlic and ginger purée and continue to fry for another minute.  Add the Patak's Tikka Masala Paste and raisins and continue to fry for another 1-2 minutes.
  2. Pour in the chopped tomatoes and mix well, bring to the boil then add the diced aubergines, cover and cook until the aubergines are tender.  Serve garnished with the chopped fresh coriander.
