Balti Bake

Perfect comfort food for these increasingly cold months - this is a great one to have baking in the oven whilst you are putting your feet up or doing something else around the house. It uses our delicious Balti cooking sauce, and is great way to add some spicy Indian flavours to an oven-cooked meal.

Ingredients

  • 75 g (3 oz) button mushrooms, cleaned
  • 75 g (3 oz) babycorn, halved
  • 100 g (31/2 oz) asparagus tips, halved
  • 1 green pepper, thickly sliced
  • 1/2 red onion, thickly sliced
  • 1 cauliflower, stalk removed and cut into florets
  • 1 Patak’s Naan Bread, made into breadcrumbs (see Anjali’s Tip)
  • 1 Patak’s Balti Cooking Sauce
  • 1 tablespoon coriander, for garnish

Method

  1. In a large baking dish add all the vegetables and mix together.
  2. Pour over the Patak’s Balti Cooking Sauce and stir well.
  3. Sprinkle over Patak’s Naan breadcrumbs.
  4. Bake in a preheated oven at 200°C / 400°F / gas 6 for 40-45 minutes. If the breadcrumbs start browning too quickly place a piece of foil on top.
  5. Serve piping hot and bubbling, garnished with coriander.
