Broccoli Madras - (Madras Hari Bhari)

A great side dish, this is part of my 'Traditional Diwali Menu' and is deliciously flavoursome. The Madras paste adds a lovely spice to the flavours, and the pine nuts give this a real decadent feel. Perfect for special occasions, but delicious anytime.

This recipe features

Ingredients

1 tbsp Patak’s Madras Paste
2 tbsp plain thick yoghurt
1 clove garlic, finely chopped
300g broccoli, broken into florets
1 red pepper, seeds removed and cut into bite size pieces
1 tbsp pine nuts
1 tbsp fresh coriander, to garnish

Methods

1. Preheat the oven to 180ºC/ Fan 160ºC/ 350ºF/ Gas Mark 4. In a large bowl mix together the Patak’s Madras Paste, yoghurt and the garlic. Add the broccoli and red pepper and make sure they are coated well in the marinade.

2. Transfer the mixture to a roasting tin and bake for 20 - 25 minutes, stirring once or twice. If the vegetables start to brown then cover with a piece of foil.

3. Add in the pine nuts and cook for a further 5 minutes. Sprinkle with fresh coriander before serving.
