Chicken Karai

Like Balti, a Karai is not actually a curry, but a wok-like dish with side handles in which a meal is often cooked. Thus, again like the Balti, it has become practice of many restaurants to name the stew-like meal after the dish it is cooked in. This is a really simple Karai using our cooking sauce - a luscious tomato and onion based sauce with cumin, chilli and ginger. The result is a spicy and slightly sweet curry - a good alternative for those who like their curries hot.

Ingredients

  • 1 tbsp of vegetable oil
  • 1 Onion - diced
  • 4 diced chicken breasts
  • 1 jar of Patak's Karai Cooking Sauce
  • 150g of chopped tomatoes (fresh or in a can)

 

Methods

  1. Heat 1 tbsp vegetable oil in a large pan.
  2. Add diced onion and fry for a few minutes.
  3. Add 4 diced, medium sized chicken breasts and stir fry until meat is sealed and browned(approx. 5 mins).
  4. Pour over the jar of Patak's Karai Sauce and simmer for 15 minutes, stirring occasionally and adding tomatoes during the process.
  5. Alternatively, use prawns, mixed vegetables, lamb or beef.
  6. Adjust simmer time accordingly.
