Chicken Madras with Pineapple

A deliciously simple dish, the sweet flavours of the pineapple work wonderfully with the fiery spices of the Madras. This is a quick, easy and tasty weekday meal, and a great (more spicy) alternative to a Sweet and Sour.

Ingredients

  • 4 chicken breasts, skin removed and diced
  • ½  onion, sliced (about 150 g (5 oz)
  • 1 green pepper, cut into small pieces
  • 1 small tin pineapple, chopped
  • 1 500g jar Patak’s Madras Cooking Sauce
  • 1 tablespoon vegetable oil

Methods

  • Heat the vegetable oil in a pan.
  • Add the onions and allow to cook for 3 minutes before adding the chicken.
  • After 3 minutes add the green peppers.
  • Allow to cook for 2 minutes before pouring over the Patak’s Madras Cooking Sauce.
  • Cover and leave to cook through for 10 minutes.
  • Drain the pineapple and add to the Madras, reserving a few pieces for garnish.
  • Sir well and cook for a further 5 minutes.
  • Serve with fresh hot Patak’s Plain Naan bread
