Cinnamon Apple Parcels - Maharani Potli

The perfect way to finish a wonderful Diwali meal, this tasty dessert is part of my Traditional Diwali menu, and tastes simply fantastic. Bursting with sweet flavour and spice, this is a real treat, and will be sure to impress friends and family.

Ingredients

 

25g pecans, roughly chopped
3 tbsp desiccated coconut
2 tbsp light brown sugar
2 tbsp raisins
3 tbsp runny honey
½ tsp freshly grated nutmeg
4 red apples, halved and cored
2 cinnamon sticks, broken into half
4 tbsp thick plain yoghurt
Zest of half a lemon
Mint, to garnish

Methods

 

1.       Preheat the oven to 180ºC/ Fan 160ºC/ 350ºF/ Gas Mark 4. Place four 20 x 20cm squares of baking parchment on the work surface. In a bowl mix together the pecans, coconut, sugar, raisins, honey and nutmeg.
 
2.       Place an apple in the centre of each baking parchment square then spoon a little of the dried fruit mix on top of each apple. Top the apples with a cinnamon stick then scrunch up the paper to make a tightly sealed parcel.
 
3.        Place in a roasting tin and bake for 25 - 30 minutes. In a bowl mix together the yoghurt and lemon zest. Serve the cinnamon apples with a dollop of yoghurt and a little fresh mint.
