Curried Squash Soup

Perfect for those chilly winter evenings, this hearty soup is a real warmer. Always delicious, butternut squashes are sweet and flavoursome, and the addition of Patak's Mild Curry paste adds just the right amount of spice. Serve up with some naan bread to keep the Indian theme going.

Ingredients

  • 450g butternut squash, peeled and diced
  • 2 onions, chopped
  • 1 tbsp butter
  • 2 cloves garlic, chopped
  • 3 tbsp Patak's Mild Curry Paste
  • 2 pints vegetable stock
  • 300ml double cream
  • ½ tsp turmeric powder

Methods

  1. Heat the butter in a pan and fry the chopped onions and garlic for 3-4 minutes.
  2. Add the Patak's Mild Curry Paste and turmeric and fry for another minute.
  3. Add the diced butternut squash and the vegetable stock.  Bring to the boil and simmer for 20 minutes, or until the squash is tender .
  4. Purée the mixture, add the double cream and salt to taste.  Gently reheat and serve hot.
