Deep Fried Prawns

These tasty prawns will go down a real treat - I guarantee it. They are little morsels simply bursting with the flavours of our Mild Curry paste (authentic spices with coriander, cumin and tomato puree), and the lemon juice adds a real zing at the end. Serve up as an appetiser.

Ingredients

  • 450g large shelled prawns
  • 175g plain flour
  • 2 tbsp Patak's Mild Curry Paste
  • 125ml water
  • 2 tbsp fresh coriander, chopped
  • few lemon wedges
  • vegetable oil for deep frying 

Methods

  1. De-vein, wash and dry the prawns. 
  2. In a separate bowl, make a batter by combining the flour with the Patak's Mild Curry Paste, water and coriander.  Stir well and allow to stand for 10 minutes. 
  3. Heat the oil for deep frying.
  4. Dip each prawn into the batter and then drop into the hot oil (a few prawns can be fried at a time) but take care not to overcrown the pan or deep-fryer.
  5. Fry the prawns for a few minutes until they have turned golden brown and the prawns are cooked through.  Drain well on kitchen paper and serve hot.
