Guilt-Free Aromatic Chicken

This is an oriental style stir-fry dish, that uses our delicious mild Korma paste. A great week day meal, it uses Quark which is a special type of curd cheese, however replace with yogurt if that is what you have handy. This one tastes healthy as it is full of vegetables, and is a great way to get the delicious flavours of a Korma in a less creamy and indulgent dish.

Ingredients

    • 4 tbsp Patak's Korma Paste
    • 10 sprays of oil
    • 450g skinless, boneless chicken breasts, diced
    • 1 onion, halved and finely sliced
    • 150g  Quark or plain yogurt
    • 225g button mushrooms, halved
    • 250g basmati rice
    • 200g baby spinach leaves
    • sea salt and black pepper to taste

Methods

  1. Heat a large wok.  Spray with half the oil.  Add the chicken and stir-fry for 5 - 10 minutes.
  2. Add the onion, toss well and then cover with a lid.  Fry for 3 minutes, adding a splash of water to the pan if necessary.
  3. Stir in the Patak's Korma Paste and toss well.  Add 2 tablespoons of water and the Quark (or yogurt), stir well and simmer gently for 5 minutes.
  4. Meanwhile, spray the remaining oil in a saucepan.  Fry the mushrooms for 5 minutes, seasoning to taste.
  5. Cook the rice according to the pack instructions, and add to the pan with the spinach.  Mix together well, allowing the baby spinach leaves to wilt slightly.
  6. Season and serve with the chicken.
