Indian Style Salad (Aloo Channa Paneer Chaat)

A zesty salad using one of my favourite products - Brinjal pickle. It has loads of fantastic flavours coming through - including lime, mint and ginger, and is a great dish. Perfect for summer, but also a wholesome change from comfort food for winter, this is one of my favourites.

Ingredients

  • 2 tbsp Patak's Brinjal Pickle, pureéd
  • 100g potatoes, boiled and diced
  • 75g paneer, diced
  • 100g canned cooked chickpeas
  • 90g pineapple, diced
  • 60g green pepper, chopped
  • 2 red onions, chopped
  • 2 tsp fresh root ginger, chopped
  • 1 tsp green chilli, chopped
  • ¾ tsp black pepper, crushed
  • juice of ½ lime
  • salt, to taste
  • 1 tbsp fresh mint leaves, chopped
  • 100g mixed salad leaves
  • 50g cherry tomatoes, halved

Methods

  1. In a bowl mix together the Patak's Brinjal Pickle and lime juice and set aside. 
  2. Mix together the rest of the ingredients except the mint leaves, salad leaves and cherry tomatoes.
  3. Pour in the Brinjal Pickle mix.  Check the seasoning and adjust the salt to taste.
  4. Sprinkle over the mint leaves and serve on a bed of salad leaves, garnish with the cherry tomatoes.
