Lemon & Prawn Rice Salad

A really simple rice salad, this works great on the side of any main dish. It tastes wondefully fresh and the lemon adds a real zing.

Ingredients

  1. 500g Basmati rice 
  2. juice and rind of 1 lemon
  3. 1 bunch fresh coriander, chopped
  4. 450g prawns, shelled and cooked

Methods

  1. Cook the rice according to the packet instructions and allow to cool.
  2. Mix together the remaining ingredients, add to the rice and gently fold in.
  3. Chill and serve.
