Mixed Berry Fool - Indian Style

A great dessert for those balmy summer days, this contains spices such as cardomom, black peppercorns and star anise, which may sound a little unusual in a dessert - but trust me taste fantastic. They add a really unique touch to this traditional pudding. A great dessert to follow your favourite curry.

Ingredients

 

100 g (3 oz) strawberries
50 g (2 oz) raspberries
50 g (2 oz) blueberries
50 g (2 oz) sugar
1 cinnamon stick
3 cloves
3 green cardamom pods
1 star anise
4 black pepper corns
8 tablespoons low fat thick yoghurt
mint, to garnish

Methods

 

In a pan add the sugar with 2 tablespoons of water. Add the cinnamon, cloves, cardamoms and black pepper corns. Add the fruit and turn on to a medium heat. Heat gently for 15 minutes. The fruit will have broken down.
Once the syrup has cooled remove the spices and discard. In a bowl mix the yoghurt with 1 tablespoon of the berry coulis. In a serving bowl add a spoon of the coulis, and then a large spoon of the yoghurt. Layer up the bowl. Serve garnished with mint and a little more coulis.
