Mushroom & Babycorn Balti

A great vegetarian alterative to a Balti, this one is another dish that uses our fabulously versatile Balti paste. The paste blends turmeric, chilli, tomato puree with other authentic spices, so all you need to bring to the party is your vegetables and some yogurt.Easy, convenient and full of the goodness of vegetables.

This recipe features

Ingredients

  • 200g babycorn, cut in half lengthways
  • 200g mushrooms, cut into quarters
  • 2 tbsp vegetable oil
  • 150g chopped tomatoes
  • 2 tbsp Patak's Balti Paste
  • 1 tbsp yogurt
  • 100ml water
  • 2 tbsp fresh coriander, chopped

Methods

  1. Heat the oil in a pan and fry the chopped onions for 3 minutes, add the Patak's Balti Paste, mushrooms and chopped tomatoes and continue to cook for 5 - 8 minutes adding a little water if the mixture begins to stick to the pan.
  2. In the meantime cook the babycorn for 3 minutes in a pan of boiling water, drain and add to the sauce.
  3. Continue to cook for 2 - 3 minutes, turn off the heat and stir in the yogurt.
  4. Garnish with the fresh coriander and serve with rice and Patak's Naan Breads.
