Pomegranate & Red Onion Raita

Pomegranates burst onto the scene a while back as a quite trendy 'superfruit'... they have since been overtaken in the rankings by the Goji berry and the like, however are still a good source of antioxidants. In this raita they look beautiful and jewel-like and are a juicy alternative to cucumber.

Ingredients

  • ½ tsp cumin seeds
  • 250g natural yogurt
  • 1 red onion, finely chopped
  • ½ green chilli, chopped
  • 1 pomegranate, seeds removed and skin discarded
  • fresh chopped mint to garnish
  • salt to taste

Methods

  1. Dry roast the cumin seeds in a frying pan on a low heat, moving them around to prevent them from burning.  After a few minutes they will become golden brown.  Remove from the heat and crush coarsely using a pestle and mortar.
  2. Mix all the ingredients together in a bowl, including the roasted cumin seeds and stir.  Check the seasoning and add salt to taste.
  3. Garnish with the freshly chopped mint and serve chilled.
