Potatoes & Peanuts (Aloo Puneri)

Another great potato side dish, this is mild yet delicately spiced and has a delectable crunch in the form of the peanuts. A great way to add a bit of interest to your everyday potato dish, or to have alongside your favourite curry, and the juice adds an extra delicious zest to the overall mix of flavours.

Ingredients

  • 450g potatoes (boiled and cubed)
  • 2 tbsp vegetable oil
  • 2 tbsp Patak's Mild Curry Paste
  • 50g unsalted peanuts, chopped
  • 1 tsp sugar
  • 1 tbsp fresh coriander, chopped
  • juice of ¼ lime

Methods

  1. Heat the oil in a pan and add the Patak's Mild Curry Paste.  Cook on a gentle heat for 3 minutes before stirring in the cubed potatoes and chopped peanuts. 
  2. Cook for a further 2 minutes then stir in the sugar and lime juice.
  3. Sprinkle with the chopped coriander and serve as an accompaniment to an Indian banquet.
