Potatoes with Cauliflower & Peas (Aloo Gobi Mutter)

A simple side dish that is bursting with the goodness of vegetables - this is a hearty winter warmer. Patak's Mild Paste gives this one a delicate spicy taste without being fiery, and it is a great way to add a little bit of Indian spice to an everyday meal. Just serve alongside chicken, beef or lamb, or of course your favourite curry.

Ingredients

  • 250g potatoes, diced and boiled
  • 200g cauliflower florets, cooked
  • 100g cooked peas
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 2 tbsp Patak's Mild Curry Paste
  • juice of 1/2 lemon
  • salt, to taste
  • 1 tbsp fresh coriander, to garnish

Methods

  1. Heat the oil in a pan and add the cumin seeds, when they begin to crackle add Patak's Mild Curry Paste.  Sprinkle in some water if the paste starts to stick.  Cook for 2 minutes. 
  2. Reduce the heat and add the potatoes, cauliflower and peas, cover and gently heat through adding a little water if the mixture sticks to the bottom of the pan.
  3. Check the seasoning and adjust if required. Squeeze in the lemon juice and stir well.
  4. Serve garnished with chopped fresh coriander
