Prawns & Courgettes

A hot, spicy recipe originating from Eastern India, this dish uses our Extra Hot Paste, which is bursting with the flavours of chillies, cumin and tomato. The combination of the succulent prawns, creamy coconut and fiery spices make this simple dish a real winner.

This recipe features

Ingredients

  • 2kg raw peeled prawns (thawed if using frozen)
  • 3 medium onions, chopped
  • 140g chopped tomatoes
  • 9 medium courgettes, sliced
  • 170g Patak's Extra Hot Curry Paste
  • 85ml vegetable oil
  • 85g desiccated coconut
  • chopped coriander or parsley to garnish

Methods

  1. Heat the oil and sauté the onions until softened. 
  2. Add the tomatoes and Patak's Extra Hot Curry Paste and simmer for 3-4 minutes.
  3. Fold in the courgettes and cook for a further 3-4 minutes.
  4. Add the prawns, cover and simmer for 5 minutes.
  5. Remove from the heat and fold in the desiccated coconut.
  6. Serve hot with rice, garnished with coriander or parsley
