Spiced Potato Salad

A fantastic version of the classic potato salad, and perfect to take along to a summer barbeque..... this salad has real flavour, courtesy of our delectable Balti paste. The potatoes are infused with the flavours of the spices, and I've used raita in this dish, which makes a welcome change to the heavy mayonnaise flavours that a lot of potato salads get. This summer salad is truly delicious.

This recipe features

Ingredients

  • 250 g (9 oz) charlotte potatoes or baby new potatoes, cleaned to remove any dirt
  • 2 tablespoon Patak’s Balti Paste
  • 2 tablespoons Patak’s Raita
  • 1 teaspoon fresh mint, chopped
  • juice of ½ lemon
  • salt, to taste
  • pepper, to taste

Methods

  1. Slice the potatoes in half and bring to the boil in a pan of water.
  2. Add 1 tablespoon of Patak’s Balti Paste to the water. Cook for 10-15 minutes or until cooked through.
  3. In a separate pan add the remaining tablespoon of Patak’s Balti Paste and 1 tablespoon of water.
  4. Place on a low heat for 3 minutes. Remove from the heat and allow to cool.
  5. In a bowl mix together the Patak’s Raita, the spiced mixture, lemon juice and fresh mint.
  6. Drain the potatoes and toss in the dressing. Fantastic served with Keralan Seafood Tikka.
