Spiced Roast Potatoes

A really simple way to literally spice up your boring old potatoes. This uses or Mild Curry paste, however you could also use our Balti paste (it's that little bit spicier). These taste truly fantastic and are perfect with your Sunday dinner, or simply alongside a weekday meal.

Ingredients

  • 700g Potatoes, peeled
  • 1 Onion, thickly sliced
  • 2 tbsp/120g Pataks Mild Curry paste
  • 40g Oil
  • Salt, to taste
  • Lemon Wedge

Methods

  1. Peel the potatoes and cut into large pieces and par-boil in salted water for 10 minutes. Drain.
  2. In a baking dish mix together the oil & Patak's Mild Curry Paste.
  3. Coat the onions & drained potatoes and with this paste mix and bake in a pre-heated oven for 35-45 minutes at 200°C/425°F/Gas mark 6 until crisp and golden.
  4. Remove from the oven, season and squeeze lemon juice over the potatoes to bring out the flavours.
