Strawberry Milk Dessert

A cooling, creamy way to end an Indian meal, this dessert takes a while to get the texture right, but it is worth the effort. Serve at the end of the night, after your favourite curry.

Ingredients

  • 3 litres whole milk
  • 350g sugar
  • 100g strawberry purée
  • 150g strawberries
  • chopped strawberry slices, to garnish

Methods

Reduce the heat and cook for about 20 minutes, stirring constantly.  Continue to heat the milk stirring every 5 minutes until the milk is reduced to 900ml and has the consistency of thick cream.  This should take about 1½ - 2 hours.

  • Remove from the heat, add the sugar and stir until dissolved.  Add the strawberry purée and chopped strawberries.
  • Allow to cool then serve in shallow dishes, garnished with a few strawberry slices.
