Summer Mango Drink (Panna)

 This is a refreshing summer drink. It is perfect served up as a non-alcoholic pre-dinner drink, with mini pappadums and dips. The cardamom gives it a wonderfully distinctive taste.

Ingredients

  • 4 green mangoes
  • 100g brown sugar, or to taste ½ teaspoon salt
  • 1 teaspoon ground cardamom

Methods

  1. Place the mangoes in a pan with some water and bring to boil.  Simmer for about 30 minutes. A llow to cool then remove from the pan.  Peel, remove the stone and put the pulp into a bowl.
  2. In a separate pan bring the sugar and 250ml water to the boil.  When the sugar has dissolved, add the mango pulp and continue to cook for about 10minutes.  When it starts to thicken, remove from the heat and add the salt and cardamom.  Dilute with chilled water and serve over ice.
