Vegetable Balti (Balti Subz Panchmael)

This is a fantastic vegetarian Balti, it is vibrant, full of tangy flavour and tastes magic with Naan bread. Packed full of the goodness of vegetables and spiced with our fantastic Balti paste, this is a great weekday meal and should please all-comers - vegetarian or not.

Ingredients

  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 2 cloves garlic, sliced
  • 1 tsp ginger, chopped
  • ½ tsp green chillies, chopped
  • 180g red onions, sliced
  • 130g canned chopped tomatoes
  • 1 tsp tomato paste
  • 4 spring onions, halved
  • 100g asparagus tips, blanched
  • 80g shitake mushrooms, halved
  • 120g baby carrots, peeled and blanched
  • 50g mangetout
  • 100g babycorn, halved and blanched
  • 30g cherry tomatoes, halved
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp lemon juice
  • 4 tbsp Patak's Balti Paste

Methods

  1. Heat the oil in a pan and add the cumin seeds, when they begin to crackle add the ginger, garlic and green chillies and continue to cook for a few minutes.
  2. Add the sliced red onions and fry until light golden brown.  Stir in the Patak's Balti Paste and cook for 2 - 3 minutes, add a little water if the mixture begins to stick to the base of the pan.
  3. Add the tomato paste and chopped tomatoes and cook for 5 - 6 minutes.
  4. Stir in the asparagus, mushrooms, baby carrots, mangetout and babycorn and cook on a high heat for 2 - 3 minutes to heat through, retaining the crunch and freshness of the vegetables.
  5. Add the cherry tomatoes, lemon juice and coriander.  Adjust the seasoning if necessary and serve hot as a main course with rice and naan breads or as an accompaniment.
