Vegetable Masala

A simple vegetarian curry using our Mild Paste. This is great if you fancy doing something different with your weekday veggies.

Ingredients

  • 3 tbsp vegetable oil
  • 200g cauliflower florets
  • 1 medium onion, chopped
  • 2 courgettes, sliced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 100g frozen peas
  • 200g chopped canned tomatoes
  • 75ml water
  • 2 tbsp Patak's Mild Curry Paste
  • 1 tbsp chopped fresh coriander

Methods

  1. Heat the oil in a pan and fry the onion for a few minutes, add the cauliflower and sear for a minute or two.  Add the remaining vegetables and cook for a further 5 minutes.
  2. Add the Patak's Mild Curry Paste, tomatoes and water, partially cover and cook for 15 minutes, stirring occasionally.
  3. Add half of the coriander and turn off the heat.
  4. Serve garnished with the remaining coriander.
