Medium Spiced Vegetable Biryani

A real favourite, a Biryani is a delicious spiced rice dish, often served up as a main meal. This one is truly delicious and works equally well with our Tikka Masala or Biryani Spice Paste. This recipe involves cooking up a Biryani on the hob, however the traditional way is to oven-bake. Ingredients

Serves 2 people

  • 275g mixed vegetables (e.g. carrots / beans / cauliflower / potatoes)
  • 85g peas
  • 4 tbps Patak's Biryani or Tikka Masala Spice Paste
  • 2 tbsp natural yogurt
  • 1 tbsp vegetable oil
  • 110g basmati rice
  • 275ml water
  • salt to taste

Method

  1. Heat the vegetable oil in a pan and stir-fry the rice for 1 minute.
  2. Add the vegetables and continue to stir-fry for another minute.
  3. Add the water, Patak's Biryani or Tikka Masala Spice Paste, yogurt and salt if using, mix thoroughly.
  4. Bring to the boil, cover and simmer without stirring until the vegetables and rice are cooked and the water absorbed (approximately 15 minutes). Allow to stand for 5 minutes before serving.
