Nutty Potato Masala - Kati Moongphali Aloo Masala

A super delicious vegetarian side dish, this is incredibly easy to make and I served this up as part of my Diwali menu - but of course makes a great potato dish anytime. Simply delicious, it uses the zesty flavours of our Tikka Masala Spice Paste, with the peanuts adding a lovely crunch.

Ingredients

Serves 4 people

  • 500g potatoes, scrubbed
  • 1 tbsp vegetable oil
  • 4 tbsp unsalted peanuts, roughly chopped
  • 4 spring onions, trimmed and cleaned and roughly chopped
  • 2 tbsp Patak’s Tikka Masala Spice Paste
  • 1 tbsp tomato puree
  • Juice of half a lemon
  • Fresh chopped coriander, for garnish
  • Salt - to taste

Method

  1. Dice the potatoes into 2cm cubes, then cook in boiling salted water for 5 minutes or until just tender. Drain.
  2. Preheat the oven to 180ºC/ Fan 160ºC/ 350ºF/ Gas Mark 4.
  3. In a roasting tin, mix together the oil and potatoes, peanuts and spring onions and roast for 10 minutes.
  4. Mix the Patak’s Tikka Masala Spice Paste and tomato puree together, add to the roasting tin and mix well. Return to the oven and roast for a further 10 minutes until everything is crisp and golden
  5. Squeeze over the lemon juice, taste and adjust the seasoning if necessary.
