Ingredients

Serves 5 people

  • 400g boiled potato, grated
  • 250g chopped spinach
  • 150g green peas
  • 1 green chilli
  • 1 1/2 tbsp. ginger, chopped
  • 2 cloves garlic
  • 2 tbsp. fresh coriander, chopped
  • 1 tbsp. mint
  • 1 1/2 tbsp. gram flour
  • 4 tbsp. bread crumbs
  • 1 tsp. salt
  • 2 tbsp. Patak's Mild Curry Spice Paste
  • 2 tsp. Garam Masala
  • 1 tbsp. oil

Method

  1. Blanch your spinach and peas by boiling them for 2-3 minutes, and then placing them in cold water to preserve their colour.
  2. In a blender / food processor add blanched spinach, green peas, green chilli, ginger, garlic, fresh coriander, mint leaves, salt and Patak's Mild Curry paste. Blend to a smooth paste. Do not add any water whilst making the paste.
  3. Add grated potatoes, bread crumbs and gram flour to the paste, and mix well to a smooth, dough-type consistency.
  4. Keep this mix in the fridge for 30-45 minutes.
  5. Divide the mix into equal parts, and roll them to form small cakes (patties). Pan fry with 1 tsp. oil in a non-stick pan.
  6. Serve hot with salad and some pickle or chutney.
