Paneer Bhurji Dos

Ingredients

Serves 8 people

  • 200g Dosa Batter Mix
  • Paneer Bhurji
  • 30ml Oil
  • 2.5g Black mustard seeds
  • 20no.s Fresh curry leaves
  • 120g Onion chopped
  • 20g Ginger chopped
  • 10g Garlic chopped
  • 5g Green chilli fresh chopped
  • 150g Fresh tomato chopped
  • 60g Pataks Mild Curry paste
  • 2.5g Turmeric powder
  • Salt To taste
  • 400g Paneer grated
  • 15g Fresh chopped coriander
  • 60ml Water

Method

Paneer Bhurji
  1. Heat oil in a pan and crackle black mustard seeds and curry leaves.
  2. Add chopped ginger, garlic and fresh green chillies and cook till the raw aroma of the garlic is gone.
  3. Add chopped onions and sauté till the onions are soft and translucent.
  4. Add Pataks mild curry paste and 60 ml water and cook on medium heat till all the water has evaporated.
  5. Add fresh chopped tomatoes and turmeric powder and cook on medium heat till the tomatoes are soft and mushy.
  6. Add grated paneer, fresh coriander and salt to taste and cook for 3-5 minutes and keep aside.
  7. Following instructions on the Dosa Batter pack, make the Dosa batter.
  8. Take a large spoonful of batter and smear it on medium hot, non- stick pan or well-seasoned Dosa griddle to make it as a pan cake as thin as possible to a point where it holds its round shape.
  9. As soon as the bottom starts colouring, sprinkle some oil on top of it and put some ready paneer bhurji on it. Fold in half moon shape and serve hot with sambar and chutney.
