Seared Wrapped Vegetables

This makes a wonderful lunch, or a light dinner - and is perfect for summer. The wonderful flavours of the paneer cheese tastes brilliant with the crunchy vegetables, and our Balti Spice Paste gives these wraps a real bite. For a really authentic taste try using Patak's Chapattis as the wrap, however ordinary wraps do just fine if this is what you have to hand.

Ingredients

Serves 2 people

  • 1/2 aubergine, thinly sliced 100 g (31/2 oz) paneer or halloumi
  • 2 tablespoons Patak’s Balti Spice Paste
  • Patak’s Chapattis or Wraps
  • Good handful of spinach, washed
  • 1 tablespoon Patak’s Brinjal Pickle
  • 2 tablespoons thick low fat yogurt
  • Salt and pepper, to taste

Method

  1. Brush the vegetables and paneer (or halloumi) well with Patak’s Balti Spice Paste.
  2. Cook on a skillet / griddle for a 2 minutes, before turning over and cooking on the other side.
  3. In a bowl mix together the yoghurt with Patak’s Brinjal Pickle.
  4. Lay a chapatti / wrap flat and place some vegetables and paneer down the middle. Sprinkle over some spinach and drizzle with brinjal pickle dressing.
  5. Wrap up and do the same with the remaining chappatis / wraps.
  6. Taste perfect with some extra brinjal pickle dressing for dipping
