Sweet Mango Chicken

Mango Chicken is a perfect alternative to a mild Korma or a Sweet & Sour - sweet and flavoursome, with the flavours of Indian spice still really coming through - this is set to become a family favourite. This fab recipe uses our fruity Sweet Mango Chutney and Mild Spice Paste, so it has just the right balance of sugar and spice.

Ingredients

Serves 4 people

  • 2 tbsp vegetable oil
  • 500g chicken breast, diced
  • 1 onion, chopped
  • 4 tsp Patak's Mild Curry Spice Paste
  • 6 tbsp water
  • 115g canned chopped tomatoes
  • 1 tbsp Patak's Mango Chutney
  • 1 tbsp fresh coriander, chopped
  • Optional garnish: 1 deseeded diced tomato, and 1 ripe mango, cut into cubes.

Method

  1. Gently heat the oil and add the Patak's Mild Curry paste. Add the water and gently fry until almost all of the water has evaporated.
  2. Then add the onions and fry for 5 minutes until soft.
  3. Add the chicken and dry until sealed
  4. Stir in the tomatoes, cover and simmer for 15 minutes or until the chicken is cooked through.
  5. Stir in the Patak's Sweet Mango Chutney and serve garnished with the chopped coriander, diced tomato and fresh mango
