January Vegetable Curry

A simple vegetable curry - perfect as a side dish, or on its own. It is mild in flavour, so suits all manner of tastes. Try alongside a Biryani for a real restaurant experience at home.

Ingredients

Serves 4 people

  • 150g cauliflower, cut into florets
  • 150g green beans
  • 150g carrot, cut into batons
  • 2 tbsp vegetable oil
  • 200g chopped tomatoes
  • 3 tbsp Patak's Mild Curry Spice Paste
  • 2 tbsp fresh coriander, chopped
  • 50ml single cream
  • 100g onions, diced
  • 125ml water
  • 1 clove garlic, crushed

Method

  1. Bring a pan of water to the boil and add the carrots. Cook for 5 minutes then add the cauliflower. Continue to cook for 3 minutes then add the green beans and cook for a further 2 minutes. Remove from the heat and drain. Set aside.
  2. Heat the oil in a pan and fry the diced onions for 2 minutes, add the garlic and Patak's Mild Curry Spice Paste and fry for a further 2 minutes. Add the chopped tomatoes and continue to cook for 5 minutes, adding a little water if the mixture begins to stick to the pan.
  3. Add the single cream and the cooked vegetables. Bring to the boil.
  4. Sprinkle over the chopped fresh coriander and serve with rice and Patak's Naan Breads.
